Belize Food Heritage Project documents Pipián and Chilmole de Frijol in Corozal

By Zoila Palma: The Belize Food Heritage Project inventory work is actively underway in the Corozal District.

Today, teams are engaging communities and documenting culinary traditions to help safeguard and celebrate Belize’s diverse food heritage.

As part of the inventory process, they documented two traditional dishes, Pipián and Chilmole de Frijol, shared by esteemed knowledge bearer Vidalia Tzul from her home in Patchakán, Corozal.

“We express gratitude to the team of Vince Martinez, Nigel Rosado, and Shawn Lizarraga for their active involvement in the inventory process, and to Love FM for helping amplify this important initiative. Together, we continue to safeguard and promote our foodways,” the Institute for Social & Cultural Research ISCR NICH said.

ISCR expressed gratitude to the Corozal House of Culture, the UNESCO International Assistance, and the Ministry of Culture for their continued support of this important initiative.
