Salt-Baked Whole Fish – The Only One of Its Kind on the Island
A vibrant culinary spectacle, the salt-baked fish is a dramatic and flavorful preparation in which a whole fish is encased in a crust of coarse salt, then ignited tableside to seal in moisture, resulting in exquisitely tender, flaky, and gently seasoned flesh. It is prepared table-side with the salt crust, then cracked open to reveal the succulent fish inside, making for a striking presentation and a delicious, moist seafood experience. The dramatic presentation, combined with melt-in-your-mouth texture and exceptional freshness, makes it a signature specialty found only at O Restaurant on Ambergris Caye.
